Partridge Casseroled in Wine / Perdices en Guisados

Preparation

  • Pluck and clean the partridges,

  • Sear them on the fire or in a skillet

  • Put them in a small stewpot with diced fried cured ham, onion, parsley and spices, four cloves of crushed garlic and white wine

  • Add water

  • Cover tightly or, even better, seal the top of the pot with a flour and water dough

  • Let the partridges cook on a gentle fire

  • When they are done, stir up some egg yolks and pour them on top

  • Serve

Ingredients

  • 6 partridges

  • 4 tbsp olive oil

  • 1/4 lb fried cured ham cut up in dice

  • 2 chopped onions

  • 4 sliced garlic cloves

  • 4 Tbs parsley

  • 500 ml / ¾ pint white wine

  • 175 ml / 6 fl oz hot water

  • 6 egg yolks
