Bacon Dumplings

Bacon Dumplings

Ingredients:

  • 1/4 lb bacon

  • 3 White bread rolls

  • 1/4 milk

  • 2 eggs

  • 4 tbsp. flour

  • 2 cups of parsley finely chopped

  • 1/2 cup of spring onions, finely chopped

  • salt

  • 1 liter of water of beef broth

Preparation:

  • Cut the bread rolls into small cubes and soften about 2/3 of them in milk.

  • Set the remaining bread cubes aside.

  • Cut the bacon into small cubes and brown lightly without any additional fat.

  • Add the spring onions, parsley and dry bread cubes and toast lightly.

  • Allow this to cool then stir in the butter, four, eggs, softened bread cubes and salt.

  • The mixture should be easy to shape into balls roughly the size of golf balls. Drop them one by one into lightly boiling salted water or broth and allow then to cook over heat for 10-20 minutes.
